This is the most amazing Thermomix Bacon Jam recipe, and it can be used with so many things! For example:

  • it will turn your humble burger into a gourmet burger,
  • boring sandwich fillings get a lift,
  • bake it on top or in the middle of your meatloaf,
  • inside your toastie with melted cheese,
  • a tasty sauce to eat with your omelette,
  • with your breakfast scrambled eggs,
  • as part of a party charcuterie or cheese platter,
  • as a finger food spread on crackers with cream cheese,
  • or fill small tart or vol au vent cases,
  • serve alongside roast meats,
  • BBQ meat condiment,
  • on top of a T-Bone steak,
  • on top of baked potatoes,
  • as a pizza base sauce.

This also works really well using left over Christmas legham in place of the bacon.

2 medium jars (approx. 450g)

Thermomix Bacon Jam Recipe - ThermoFun | Thermomix Recipes & Tips (1)

Ingredients

  • 2 garlic cloves, peeled
  • 1 large onion, peeled and halved
  • 300g short cut bacon, quartered - trim ALL fat
  • 10g olive oil
  • 160g brown sugar
  • 80g apple cider vinegar
  • 60g maple syrup
  • 1 tablespoon instant coffee, dissolved in 3 tablespoon boiling water (see notes)
  • 2 teaspoon paprika, smoked or sweet
  • ½ teaspoon cinnamon, ground

Instructions

  1. Place garlic, onion, bacon and oil into TM bowl and chop 3 sec / speed 5.
  2. Scrape down and cook 10 mins / Varoma / speed soft / Reverse.
  3. Add remaining ingredients and cook 10 mins / 100°C / speed soft / Reverse.
  4. Cook a further 10 mins / Varoma / speed soft / Reverse / MC off, placing simmering basket on TM lid to prevent spatter.
  5. Pour into sterilised glass jars. Store in fridge (up to 2 months).

TM5 users: In this recipe, when Varoma temperature is stated, please use 115°C.

    Notes

    This recipe can be doubled!
    Optional additions:1 tablespoon seeded mustard;or ½ teaspoon chilli flakes;or 20g dried cranberries (good served with Christmas roast meats).
    I have a coffee machine so I use 2 double shots each with 25ml water. The coffee taste is not at all obvious, it just adds more depth to all the other flavours.

    Bacon Jam needs to be stored in the fridge. It keeps for approx. 2 months.

    This also works really well using left over Christmas leg ham!

        Simone it's delicious! I'm wondering if you are intolerant to coffee in the way of actually allergic to it, or you just don't like the taste of it? If allergic to it you will have to sadly leave it out (I haven't tried a substitute) OR if you just don't like coffee the taste is not at all obvious, it just adds more depth to all the other flavours.

      Help! I just made this for Christmas gifts, followed the recipe exactly but its so runny and watery! Will it thicken when it cools or what can I do to save it?!!!

        Hey Anna, yes it will thicken once refrigerated. Sometimes it can be runny and that is due to fatty bacon or some fat not cut off the bacon. If this happens it is perfect spread on a pizza base! :)

      Hi, I made this for the first time and followed the recipe exactly but found it was too runny and didn’t set in the fridge.. is there something I can do it make it a bit thicker? Still tasted delicious though :)

        Sarah it sounds like you may have had some fat on your bacon? Also wondering how long was it in the fridge for? On the odd occasion mine can be runnier than other times and that is when I use it on a pizza as the pizza sauce! It's delicious!

      I'm just wondering if you think you could blitz this to make a smooth consistency? I am not a fan of onion but assume the flavour is essential so could handle it if it wasn't "chunky"! I've been told it's amazing so keen to try!

        Hi Kylie, yes it will. I use short cut simply because it has a lot less fat to cut off. Normal bacon will be fine just make sure you trim all the fat. Enjoy! :)

      I made this WONDERFUL recipe again today. When I added the bacon and onion, I made sure the pieces had texture but were more smooth...I used Hickory Smoked Bacon which was AWESOME! And based on the comments, I did decrease the brown sugar 20g, the maple syrup 10 grams and added 10g of Worcestershire sauce! The kitchen smells AMAZING and am sure this recipe will be a great surprise in the New Year's hampers am making! Thank you Leonie!

        oh dear Kylie. It can vary depending on how fatty the bacon is. Yes cook it a bit longer with simmering basket on top - but it does thicken up in the fridge too.
        On the off chance your batch doesn't thicken properly - use it spread on a pizza base - it's just amazing! :)

        Marieke, you can leave the coffee out, but it does just add a depth to the overall flavour of the jam. I know of a few people that hate coffee and they say they can't taste it.

      I have made this a few times now. Just about to make it again. It is delicious. Gave some away as gifts for Christmas. Made some after Christmas with leftover ham. Served with Pulled pork, cheese, burgers, or sausages. All scrumptious.

      The first time I made this, I found it to be a little bit sweet for my taste, though hubby and my in-laws all loved it!

      I've just made a batch today, and this is what I did to reduce the sweetness a little:

      - Reduce sugar by 20g
      - Reduce maple syrup by 10g
      - Add 10g worcestershire sauce

      I tested it out when it was done, and it has definitely toned down the sweetness, and is still very yummy. Can't wait to try it out tomorrow night on pizza. Thanks for another great recipe! :-)

      Make this in my Bellini the other night, I tweaked the recipe a tad by using YIAH products, served it up on burgers while hot and my male was blown away.

      Brought some more into work today to have with cheese on bickies and all the men I work with found it delicious. I had to send them the recipe so their wives can cook it at home. LOL

          Hi Veronica, general rule of thumb for TM recipes is you add 20% more cooking time when doubling a recipe. Enjoy! :)

      Have been meaning to cook this for some time , whipped it up this morning and it's delicious , Thankyou !
      I used Panela to sweeten and left out the maple syrup , and it was definitely sweet enough for me ; next time I will try the maple syrup and down the panela a bit . I think the cranberries would be great , but as it is, it dresses up a sharp chedder very nicely, it will be a staple on my cheese board!

        Pam to thicken it up, cook it a bit longer. Not sure why it is very very runny as mine is usually very thick. However a suggestion though, for a runny batch keep it and use it spread on a pizza as a pizza sauce - it's awesome! :)

      Hello I just made this and hubs was wanting it eat it straight from the bowl. This will definitely be a winner with him and a few friends. Mine did turn out a bit runny, I cooked it for another 5 mins with the mc off. I also filled a 500g jar to the brim with a little left over (not worth putting in a jar so we'll sample it now)

        Pleased you like it Cath. It will thicken up in the fridge. A tip though - you can make a thin batch (less cooking time) and use it as a sauce on a pizza base! mmmmmmmm! :)

        Sorry Lauren - I really am wary on guessing when I really don't know! :( There is a fair amount of sugar in it so it should be fine for a good 2-3 months in the fridge - however I am guessing!
