Ingredients

  • 4 oz. 110 g uncooked bacon, chopped
  • 8 oz. (1½ cups) 230 g (350 ml) yellow onion, thinly slicedyellow onions, thinly sliced
  • ¼ tsp ¼ tsp salt
  • ¼ tsp ¼ tsp pepper
  • 1 tbsp 1 tbsp olive oil, for sautéeing
  • 4 (213 lbs) 4 (1.1 kg) pork chop, boneless, center-cut loinpork chops, boneless, center-cut loin
  • ½ cup 120 ml beef broth
  • ¼ cup 60 ml heavy whipping cream
  • salt and ground black pepper, for seasoning

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Place the bacon in a large skillet over medium heat. Cook for about 10-15 minutes or until crisp, turning occasionally. Transfer the bacon to a medium-sized bowl, and leave the bacon grease in the pan. Maintain medium heat.

  2. Add the onions, salt, and pepper to the skillet. Stir frequently for about 15 to 20 minutes, or until tender. Transfer onions to the bowl with bacon.

  3. Increase heat to medium-high and add the oil. Season the pork chops with salt and pepper, and place in the skillet. Brown on the first side for 3 minutes. Flip the chops, and reduce the heat to medium. Cook for 7-10 minutes, or until no longer pink in the center. Remove to a platter and tent with foil. Maintain medium heat.

  4. Pour broth into the skillet and scrape up any browned bits. Add the cream, and stir together for 2-3 minutes, or until the mixture thickens. Add the onions and bacon to the pan, and increase heat to medium-high. Stir frequently, and cook for about 8-10 minutes, or until mixture becomes golden and creamy.

  5. To serve, top the pork chops with the creamy onion and bacon mixture.

Tip

Green it up! Hearty and rich pork chops are perfectly complemented with a generous helping of fresh, spicy greens, such as arugula.

    This was the best way I have ever ate pork chops.. I will be making this again! I think it would also be good with beef or chicken..

    I do a similar recipe to this but use lambs liver (lambs fry) sliced thinly. I brown the liver both sides for about a minute then put all back into the pan again and leave to simmer until the cream has reduced. Divine and even the grandkids love it!

    Even small onions aren't carb-free; a half of one has almost 3g net carbs. Add a salad and you easily get 5g or more for one meal. Do that for all 3 meals and you are no longer in ketogenic range.

    Hi love your recipes but on some of the ingredients list it will say 3dl heavy cream wondering what dl is?

    It's one-tenth of a litre, so 3dl = 0.3 litres or 300 mls. If you Google dl to ml you'll see a handy converter that works out dls to other liquid measurements.

    I wasn't that impressed with the cream sauce. I'll do it again, but just eat the caramelized onions with the bacon, no cream. Then, I suppose I'd have to add a little more fat to make it keto. Or else, I'd look for some spices to make it more flavorful.

    We made this tonight with 2 pounds of pork chops. It served 5 adults and 1 child (5). We had a green salad and some skinny green beans cooked in butter with some bacon crumbled on top. We still have left overs that will make two more meals. It was enjoyed by all!

I can't believe I have never in my life made carmelized onions. I doubled the sauce because I knew from experience I would want more and would like it on other things. I am enjoying cooking for the first time in my life... and I just turned 72. It's only 4pm and I am anxious to have some pork chops. I'm going to have fried cabbage with it.

    Cream based sauces can be more likely than others to "split" when reheating but you can stir it back together and it will still taste the same.
