Ingredients
To Cook Beef :
- 1 kg Beef
- 1 no. Onion Chopped
- 1 tbsp Kashmiri chilly powder
- A small piece Ginger Chopped
- 8 Cloves Garlic Chopped
- 1 no. Tomato Chopped
- 1/2 tsp Turmeric powder
- 1/4 lemon Lemon juice
- 3 nos Green Chillies Split
- Water As required
- Salt As required
For Frying Beef :
- 1/2 cup Coconut oil
- 1/2 of one Onion Chopped
- 1/2 Cup Fresh coconut sliced into small pieces called `kothu`
- 4 stems Curry leaves
- Mustard seeds A pinch
- 1 tsp Powdered black pepper
For Garam Masala:
- 1 nos Bay Leaves
- 1 nos Cinnamon Small Piece
- 5 nos Cloves
- 1.5 tsp Fennel seeds
- 1 tsp Black pepper seeds
Instructions
For preparing Kottayam Style Beef Fry, first prepare GARAM MASALA by grinding together bay leaves, cinnamon, cardamom, cloves, black pepper seeds and fennel.
Cook the beef with all the other ingredients stated in section: 'To Cook Beef' including garam masala in required quantity of water.
Add salt and continue cooking on low heat until almost dry but cooked. Set this aside.
Heat the coconut oil in a frying pan and fry the coconut pieces till browned. Remove the coconut slices, add a pinch of mustard seeds and allow them to break in the hot oil.
Add one chopped onion under the 'frying section' and saute till brown.
Add curry leaves and previously fried 'thenga kothu'.
Stir in the prepared beef and powdered black pepper. Add more oil if required.
Stir in gentle heat until the beef is fully roasted and dark. Take care that the beef pieces are not too much browned and hard.
