How to Make These Gluten-Free Zucchini Fritters

2. In a food processor, put the mixing blade in the bottom. Add zucchini, egg and garlic and puree. When it’s well mixed, add flour and salt.>
3. In a large skillet, add avocado oil over medium heat. Add a tbsp of zucchini batter to the skillet and flatten with a spatula. Cook each side for about 2 minutes.>
4. Remove from pan and let cool on a plate with paper towel for a few minutes. Then arrange on a plate and garnish with sour cream or yogurt and parsley.>

Tips for Making Gluten-Free Zucchini Fritters
- Be sure to peel the zucchini first.
- Use a food processor with the mixing blade to puree all the ingredients together.
- Be sure the oil in the skillet is at medium heat before you add the fritter batter.
- Don’t overcrowd your pan when you place the zucchini fritters in the pan. The spacing gives you a better chance at browning the fritters instead of them steaming from overcrowding.

Ingredients
- 2 medium zucchini
- 1/4 cup all-purpose gluten-free flour
- 1 egg
- 1 clove garlic
- 1 tsp Celtic sea salt
- 4 tbsp avocado oil
Garnish
- 1/2 cup yogurt or sour cream
- 2 tbsp parsley chopped
Instructions
