  1. Stabilise the Filling: Whilst you can freeze the filling as it is, it is best to stabilise it with gelatine first. This will help keep the volume in the filling, which is often lost when whipped cream is frozen and prevent it from going watery.
  2. Place Into a Container: It is best to store your cannoli filling in an airtight container. Make sure the lids secure tightly as you do not want any moisture or air getting to the mixture.
  3. Label: Label your container with the date of freezing and what is inside.
  4. Freeze: Place your container into the freezer and keep frozen for up to a month.

Don’t Freeze Filled Cannolis
As discussed above, cannolis should be filled with the filling at the last minute. Freezing filled cannoli shells is not an option as it will cause the fried pastry dough shells to become soggy and disintegrate.

Consider Fillings
You can add so many different elements to the fillings for cannolis, including ingredients such as chocolate chips, fruit, purees and spreads. Just be careful when adding these if you plan to freeze the filling as you will need to ensure that anything added is also freezer safe.

Do NOT Use Ziplock Bags
Whilst ziplock bags are a common feature in the freezer, it is not recommended as a method of storage for cannoli filling. This is because, when thawed, it could create a lot of mess and it will be far easier to use a plastic airtight container.

How Long Can You Freeze Cannolis?

Theoretically, the mixture could last in the freezer for a couple of months, but the texture and quality of the mixture will start to seriously degrade after a few weeks. Therefore, we advise you to use and consume the mixture within a month.
